Soft flax, oat, and wholewheat dinner rolls
Edition 1,753 in my squishy bread series… sorry for those who are bored! These ones may not look up to much, but I can assure you they’re such a winner! At first glance, they sound like a health food; one of those recipes which promises to deliver yet massively falls short. These are really fabulous though, I promise! The wholewheat, oats and flaxseed contribute incredible nutty flavours, meanwhile the honey adds a floral sweetness, and a hefty drizzle of rapeseed oil gives them a buttery flavour. A fluffy interior lies beneath a delicate crust, which makes them the perfect dinner roll or soup accompaniment (I know, not soup weather yet, and let me be clear I’m NOT trying to invite soup weather, but for when a soup-y moment arises, they should feature).
The dough is quite wet, so I recommend using a stand mixer if you have one, and let it do its thing. I topped mine with sesame seeds this week, but you can use any seed of your choice. Enjoy!
