Pumpkin spice latte cake

I seem to go through baking phases… as you may have noticed, cake is my latest obsession. I think this is largely a reflection of my current need for sweet comfort, some relaxation, and escapism from my whirring brain, but also, I find there is no better time to lose myself in some kitchen sorcery than now. Besides the cold and sogginess at this time of year which lures me into the kitchen to seek some warmth and comfort, I also LOVE the ingredients and flavours associated with this season.

This pumpkin cake is a riff on a Cupcake Jemma recipe, (fun fact, CJ’s Youtube channel saved me from one of my most challenging periods of anxiety back in 2017, during this time I really struggled to sleep… I would spend night after night watching her video's on Youtube which were an excellent antidote to my anxiety.) It has a stunning golden hue and is ultra-tender with a mellow hit of spice. I’ve then adapted a cream cheese icing recipe from legend, Dan Lepard, incorporating a touch of coffee for the ‘latte’ element to this Pumpkin latte cake. I’m going to be totally honest at this point and admit that I haven’t actually tried a Pumpkin spice latte before… I know, I’m a complete Charlatan for trying to replicate it in cake form without any idea of what I’m aiming for. Nevertheless, this tastes how I imagine it should, and frankly, it’s yummy, soooo, that’s all that matters right?
