Just a quick note from me to say the most heartfelt thank you (again) for all your support and kindness. You’re all too good to me! It’s generally been a very mediocre week, but there have been some cute bakey moments that I have to tell you about.
Firstly, a GLORIOUS brown butter, apple and spice cake – has anyone tried these Belgian almond thins before? If not, go buy a packet now and thank me later. Anyway, the cake tastes very similar to these, nutty, buttery, delicately spiced, and full of caramel notes. The apple is a winning accompaniment, it’s literally pure comfort. The recipe I used, was from my new favourite foodie, Jess – you can find it here. I switched out the rosemary and use 1 tsp of mixed spice instead, I also used crisp Braeburn apples over Bramley (it’s all I had in) – my net weight of apples, (once peeled and cored), was about 250g, and I baked it at 180C/160Cfan for 50 minutes. Honestly this cake bought the biggest smile to my face, enjoyed hot or cold, it’s one for the archives! Go make it!
Second – Bake Off is back, I loved it, obv!
Third, I made a couple of my go-to, stress-free bakes, ones that require very few ingredients and minimal brain power, for when life feels a bit hectic, but you need your fill of bake-therapy!
