#55+ Apple & Blackberry Eve's pudding
As I reluctantly face the prospect of a new season, I feel compelled to comfort myself with good old-fashioned puddings.
Today I bring you a classic, Eve's Pudding. As I’ve mentioned before, my mum has never been a big baker or cook, but what she does, she does very well. As a child, this was one of her signature autumn/winter puds, served with cream or custard, it never failed to please.
My rendition strays slightly from the apple classic with the addition of, seasonal star of the hedgerows, blackberries. The combination of apple and blackberry is nothing new, but it really is a culinary match made in heaven. Plump, purple, dramatic blackberries contribute a little sharpness, and are the perfect accompaniment to the more subdued sweet, green apples, yielding a fabulous combination of taste and texture.
Whilst this combination is often seen as the basis for crumbles, it also works wonderfully in this adaptation of the classic Eve’s pudding.
The fruit isn’t heavily sweetened and is paired with a little lemon juice and zest. Meanwhile, the sponge incorporates some warming vanilla and the addition of a little baking powder alongside the self-raising flour ensures a good rise and yields a fluffy light sponge. It really is heavenly.
