Cherry, Almond Ricotta cakes
These little cakes were the result of a sudden, (fairly desperate), NEED for cake when I woke up on Thursday morning. I’m not sure if I had been dreaming of cake, or whether my cake reserves had just dipped below their minimum threshold (I know, I’m dramatic), but clearly I was going to need to fulfil my cakey-desires before things got messy (aka a cranky Steph).
I wanted it to be something super simple, nothing too big or elaborate, and full of flavour. These little cakes are just that. You can decide you want cake; prep, bake and be eating one within the hour I reckon - they’re 100% comfort, can be eaten hot or cold, and can be adapted to suit your fruity/nutty preferences, if you can bear to save a couple, I think they get even better on day two!
