Just wanted to write a quick note to accompany this week’s wicked choccy almond torte…
I really don’t know how to write this but… well, the response to last week’s newsletter made me cry with happiness, I just feel so bloomin’ lucky. The empathy, kindness, and love has been completely overwhelming, and despite the challenges I continue to face, the sense that people care means the world!
I have been away with family for a few days this week, so I’m afraid I don’t have much by way of recipe content to share, but will be returning to my kitchen next week, which will hopefully yield a few nuggets of foodie joy!
In the meantime, sending so much love and the biggest hugs to each and every one of you!
Chocolate Almond Torte (GF)
Whilst I continue to struggle a bit with life-ness, simplicity and comfort are paramount… and this torte absolutely fulfils those criteria.
It sort of bridges the gap between cake and brownie… it’s moist, and just about delicate enough to qualify as cake, but fudgy, dark, and rich, much like the best brownie.
It’s also super simple to prepare, which makes it the perfect low-stress bake.
I add a little almond extract to boost the natural almond flavour, but this is optional, and the espresso simply enhances the chocolate flavour.
