Coconut & lime Cake
This coconut and lime cake was the recipe for my July Cheshire life column. I went on a right little mission to come up with it… the coconut sponge is light, moist, coconutty - it’s pure heaven. To cut through the richness of the coconut, I doused the sponges in a zesty lime syrup, then sandwiched the cake with a superbly zingy lime curd. I then topped it all off with an ethereally light coconut whipped cream - I hate sounding arrogant but honestly, it’s so good! If you try it, let me know what you think!
