Coconut, Honey & Oat biscuits (AKA Anzac biscuits)
Sweet oat biscuits are an undeniably comforting phenomenon. In the case of an Anzac biscuit, the combination of butter, oats, coconut, and syrup, yields a deeply wholesome and nostalgic eating experience - the aroma is enough to evoke feelings of warm sunshine on your face - BLISS!
The iconic Anzac biscuit evolved in Australia and New Zealand around the same time, they have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. Legend has it that these biscuits were sent by wives and women's groups to soldiers abroad because the biscuits kept well during transportation.
I have never been to either Australia or New Zealand so haven’t tried an OG version of this humble biscuit… in fact, I daresay my version would be considered entirely inauthentic. However, I think these are REALLY good, so I’m hoping that Anzac fans will be pleasantly surprised by my subtle modifications.
My recipe includes the usual oat, butter, and coconut combo; however, I incorporate a little wholemeal flour for nuttiness, honey for a slightly floral flavour, and a touch of lemon zest, which I think perfectly complements the sweetness. These biscuits are as irresistibly easy to make and bake as they are to eat… so honestly, I don’t know what you’re waiting for - go make them!
